CULTIVAR MASTOIDIS

MAIN PLACE OF CULTIVATION: Province of Laconia in the Greek peninsula of the Peloponnese, extending from the island of Corfu to Attica, including the island of Crete.

AROMAS: Pleasant, bringing back to memory a scent of sweet almond and apple.

FLAVOR: Its peculiarity are bitter and slightly spicy notes, with an undernote of sweet, dried almond, lightly toasted, and notes of bitter almond and pleasantly floral nuances.

TYPICAL AROMAGRAM:

CONSERVATION: Store in a cool, dry place, away from light and sources of heat. Once opened, to preserve quality minimize exposure to air.

USE IN THE KITCHEN: Ideal for fish and white meat preparations, both raw and cooked.

AGRONOMIC CHARACTERISTICS:
Due to its resistance to cold, this is a rustic variety; it
can actually be found at altitudes exceeding 1,000 meters, in the most rugged areas of the
island of Crete. It is also particularly resistant to dry climates.
One of the distinctive features of this plant is its moderate and alternating productivity, due
to its mid-season flowering.
